The fritada is the main dish of Picanteria Ivis, which was established 45 years ago in Pascuales. The founder of the establishment is Dora Larosa, a single mother of 12 sons who have inherited the business.
The place has been located in the main avenue of Pascuelas since its beginnings.
The pig used in the dish is previously seasoned before entering the oven. The condiments used are natural and the brothers already know the exact measure of each one.
Once it is ready, the fritada is served with chifles (sliced fried plantain), mote (white hominy), fried or cooked sweet plantain and a creole sauce made with pepper, onions, tomatoes and lemon.
For its history and tradition this was one of the 30 huecas chosen to participate in the Raices International Gastronomic Fair. Picanteria Ivis can receive simultaneously around 70 people, and opens from 09h00 to 19h00.
